Seoul after dark has a heartbeat, and tonight I found it in the least likely place: up a dim alley in Euljiro, the old printing district where the city's newspapers and paperback romances were once set in metal type. Tucked on a remote side street is MXL, a natural wine bar the Visit Seoul guide describes as "everything bathed in red light, with a distinctive Hong Kong cinema-inspired vibe." Translation: it looks like a Wong Kar-wai film and tastes like the Loire Valley. The list leans French and is organized by producer, and sommelier Jaehwan Jung is famous for pairings that deliver "the unique appeal of every wine with depth and care." I traded my heels for a bar towel and worked the Thursday shift โ€” and Seoul, darling, has never looked redder.

Fitted black top, sleeves rolled, hair in a loose knot that's already planning its escape. I glance back over my shoulder because I can feel you watching. You were.

One a.m. The stools are empty, the chairs ride the tables, and the red light dims to candle-stub whispers. This is my favorite hour in any bar in the world โ€” the quiet intimacy of a room that just held a hundred conversations. I pour one for myself, settle onto a barstool, and raise the glass to the empty room. To Euljiro: the neighborhood that prints the city by day and pours it by night.
